I especially love Sake, followed closely by Unagi, Hamachi, Tai... but a real good FRESH (not old and strong) Uni (sea urchin) is a true delight - especially Uni-tama (with raw quail egg).

all time favorite is the sear'd salmon on top of sticky rice, i would have to say that is one of the best japanese food for texture and flavor
