FROM (Not)ch: If you think about it logically, the moon isn't a single block and neither is the sun. You can make circles in Minecraft if you make them big enough, and what's bigger than a moon or sun? You can change the texture if you want easily anyway. Notch made them squares in the beginning more as a joke anyway... I think....
